The Science Behind the Char
Unlike conventional pizzas baked at lower temperatures, PST pizzas are cooked in a traditional wood-fired dome oven reaching between 450°C and 480°C. At this intense heat, each pizza is cooked in just 60 to 70 seconds.
This rapid bake creates what pizzaioli call "leopard spotting", small charred bubbles that naturally form around the cornicione, or outer crust.
These spots are not burnt. They are intentional.
The intense heat caramelises the natural sugars within the dough while triggering the Maillard reaction, creating layers of flavour, aroma and texture that simply cannot be replicated in a conventional oven. The result is a crust that is crisp on the outside, light and airy inside, with subtle smoky notes that elevate every bite.
A Dough That Takes Time

Every PST pizza starts with dough that undergoes a 30-hour cold fermentation using PST's original flour blend imported from Japan. This slow fermentation develops flavour naturally while creating the airy structure that allows the crust to puff beautifully when it meets the intense heat of the wood-fired oven.
Because every pizza is handcrafted, no two crusts will ever be identical. Each one develops its own unique pattern of char, making every pizza an individual piece of craftsmanship.
